I have been craving a super rich chocolate dessert for a few days now, so when we decided to have some friends over for dinner I jumped at the opportunity to appease my sweet tooth! I went to look in my baking cabinet and there was a bag of Rolo's starring back at me. I also saw a chocolate fudge cake mix and the wheels started turning... I gathered up a few more ingredients and the chocolate adventure began!
I started by dumping in the cake mix and looking at what is supposed to be added... but I knew I wanted to mix it up and bring some creativity to this mix. So, don't be surprised when I start adding some extras that aren't listed on the back of a regular old box of cake mix.
The only steps from the back of the box I followed were adding the 1/2 cup of vegetable oil, 3 eggs, and preheating the oven to 350 degrees of course.
The box called for 1 1/4 cup of water, but I thought, let's take it up a notch... let's do 1 cup hot chocolate and 1/4 cup of milk instead of water. I mean those are kind of like water, right? I figured it would just enhance the chocolate flavor.
Then to make the cake even richer I added 1 TBS of dark chocolate powder and 1 tsp of vanilla. I blame the intense chocolate cravings... I told you I was having chocolate cravings right?
Then I started unwrapping the Rolos. I didn't do the full bag at this point, I did about 2/3 of the bag, and saved the rest for chopping up to put on the top of the cake.
I am using my favorite knife here, it came in a knife set that we got as a wedding gift... There are lots of options in the set, but I love chopping with this knife in particular.
After you have poured your cake mix into the 9x13 greased pan you can sprinkle all of the cut up Rolos on top and let them sink in as your cake bakes.
Then pop your cake in the preheated oven and bake for 30 minutes. Once the 30 minutes is up, check it with a tooth pick to make sure your cake is cooked all the way through. If your toothpick comes out clean, then your cake is done. Take it out and let it cool for about 20 minutes.
Once your cake is cool, you can make your chocolate ganache frosting. If you are wondering what a ganache frosting is... it is basically a thick fudge like frosting. Make sure you are using a microwave save bowl and pour in a cup of chocolate chips, then add 1 TBS of butter.
Put your bowl in the microwave and melt your chocolate chips and butter. I did mine for about a minute, took it out and stirred a little bit, then put it back in for another 30 seconds. Make sure you are keeping an eye on this because you don't want to burn your chocolate chips and waste prescious chocolate.
Once your chocolate chips and butter are melted pour in your sweetened condensed milk and stir it all together. It should stir together into a smooth chocolate mixture. Then add 1/4 a cup of dark chocolate powder and 1/3 cup of powered sugar. Mix together until completely blended and pour over the top of your cake.
Now, if you have a super cute little helper like I did, you should definitely let them lick the spatula from the frosting you just made. It is a great reward for all their hard work up to this point.
Then chop up the rest of your Rolos up and sprinkle them on top of your frosting. Your Double Fudge Rolo Cake is now ready to eat! Look how moist that cake is, you know you can't wait to make it and have a piece yourself!
