Baseball Cupcakes

   Are you having a Baseball, Tee ball, or Softball themed party this spring or summer? Are so in charge of bringing snacks for the team? Or are you hosting an end of the season party? If so you have to make these quick and simple baseball cupcakes! They will be the hit of the party or game!

 

    I recently made these delicious cupcakes as tee ball game treats for some very sweet little girls. Now, these are not made from scratch because I was looking for something quick and easy. But if you have a great recipe you use to make cupcakes feel free to use whatever mix you would like. I chose to use a funfetti cake mix but you can use whatever kind of cake mix you like best.   

 To start off I preheated the oven to 350 degrees, and put the cupcake liners in the cupcake pan. Since I was making these for little girls I decided to make them with pink polka dot liners, but you can choose whatever you like. Then I added the cake mix, 1/2 cut vegetable oil, 1 cup of milk, and three eggs in a bowl and mixed it all together until there were no lumps. Then I filled my liners about 3/4 of the way full, and popped them in the oven to bake. 

   However, one little trick I picked up over the years for baking cupcakes is to preheat the oven to 350 degrees but then once you pop the cupcakes in the oven you turn it down to 325 degrees and bake for 25 minutes. I feel like it helps give you a nicely rounded top, and your cupcakes don't cave in.... For me it bakes them just right with a rounded golden top!

  After that I set popped the out of the cupcake pan and let them cool on cooling racks. Then I moved on to making the frosting and making the decorations...

   Unfortunately I forgot to get any pictures of mixing together the frosting. But I used one tub of pre-made whipped vanilla frosting, 1/2 a stick of softened butter, 1 1/2 cup of powdered sugar, a tsp of vanilla, and a TBS of milk and beat it all together using my hand mixer. I think you can see why I forgot, because I was distracted by my cute little helper.

   I decided not to just use my pre-made frosting because I was afraid it wouldn't be strong enough to hold up my decorations. So I wanted a slightly stiffer frosting.

   But don't worry I did get a few pictures of how I made the little baseball decorations. I was a little worried that they were going to be hard to make, but it was actually really easy. I bought some red cookie icing and cut the tip off leaving a very tiny hole to make my decorations.

   I decided to use golden Oreo's, then I took a sharp knife and sliced one of the cookie sides off. Once I had the sides off I made two little arches on the sides of the frosting. Then, I made little notches on each arch to do the seams of the baseball. I didn't want the red icing to smear as I put the cookie decorations into the frosting on top of the cupcake, so I popped them on a plate and threw them in the freezer for about 30 minutes. 

    Then, I frosted the top of the cupcakes in a easy swirly design and put in the decorations slightly off center. I think they look so cute, and I will definitely be making them again! There are so many different variations you can make with this recipe, cupcake flavors, different Oreo flavors, sprinkles on the frosting. You could even do different sports balls! 

 Baseball Cupcake Recipe

   Preheat oven to 350 degrees

 

Cupcakes

1 cake mix

1/2 cup vegetable oil

1 cup milk 

3 eggs

 

Frosting

1 container pre-made whipped frosting

1 1/2 cup powdered sugar

1/4 cup butter

1 tsp vanilla

1 TBS milk

 

 

Decorations

1 package oreos

1 package red icing

 

  Put cupcake liners in cupcake pan. Mix together all cupcake ingredients. Pour into each liner filling to about 3/4 of the way full. Then pop in the oven and turn down the temperature to 325 degrees, bake for 25 minutes. Let them cool on a cooling rack. Prepare decorations by slicing one side of Oreo off and the making baseball design on the Oreo frosting. Put in freezer for 39 minutes. Beat together frosting ingredients until well combined and smooth. Frost cupcakes and stick on decorations. Serve and Enjoy!
