My family loves bananas, but for some reason every once and awhile we have a few left over that get brown and no one wants to eat... but you don't need to throw them away! They can be made into something delicious! This recipe is one that has quite a few ingredients, which usually tends to steer me away, but this one is worth it. I love to bake so I generally have all of the ingredients on hand. Although, sometimes you do have to improvise, as you will see I did, while making this recipe.

So let's get started by preheating your oven to 350 degree (doesn't it seem like most things are baked at 350 degrees?). Then add half a cup of melted coconut oil. You could use vegetable oil, or melted butter if you don't have coconut oil on hand it won't change the taste at all. Then 1/3 cup granulated sugar, and 1/2 cup of light brown sugar. Then pour in 1 tsp of vanilla.

Here is where I had to improvise. Normally, when I make this bread I use 1 cup of sour cream, which I thought I had in the fridge but didn't. So, I looked around at what I did have that I could add instead. I had some Greek yogurt, and thought to myself... that could work. However, it was strawberry so I hesitated, but then thought... oh it will be fine. And actually in the end I didn't taste the strawberry flavor at all.

Then I mix all that together until the sugar mixture has a nice creamy texture.

These were my three left over brown bananas that nobody wanted to eat (does anyone else sing the Grinch song whenever they see bananas like this?). They were starting to get mushy so I knew they were just perfect for this recipe. So, I tossed them in and let the mixer do the work. At this point your mixture will no longer be smooth. Don't worry it will still turn out fine.

Then you are going to start adding in your dry ingredients. 1/2 tsp baking soda, 1 tsp of cinnamon (you could leave this out, or add nutmeg, or pumpkin pie spice, or all three), 1/2 tsp baking powder, a pinch of salt, and 1 1/2 cups of flour. Let your mixer blend it all together until everything is well blended. There may still be some lumps but it will cook just fine.

Now, in a separate bowl you are going to whip together the cheesecake filling. You are going to do a full 8 oz block of cream cheese (at room temperature), 2 eggs, 1/2 cup of granulated sugar, and 1/3 cup of flour. I used my hand mixer to ix it all together since my stand mixer was full of the banana bread mixture.

This mixture should be nice and smooth when it is all combined.

Then spray your bread pan with non stick spray and you are going to start layering. First pour in about 2/3 of your banana bread mixture, Then all of your cheesecake filling. You will want to have a spatula on hand to spread it all out so that every bite will have some of the yummy cheesecake mixture in it. Last you are going to pour on the rest of your banana bread mixture.

This step is always a little tricky because it seems the banana bread tries to sink in a little, and makes it hard to spread over the top of the cheesecake mixture. But it doesn't have to be perfect it will still taste amazing.

Then put it in the oven and bake for about 50 minutes. The top is going to crack as it bakes but I think that adds character. You will want to check it before taking it out. I like to use a tooth pick to make sure the middle cheesecake layer is done.

Of course you have to let it cool for awhile, but then if you run a knife around the sides and flip it over it should pop right out and you are ready to start slicing up this delicious Cheesecake stuffed Banana Bread!

Cheesecake Stuffed Banana Bread

Preheat oven to 350 degrees

Banana Bread

1 egg

1/2 cup coconut oil

1/3 cup granulated sugar

1/2 cup brown sugar

1 tsp vanilla

1 cup Greek yogurt

3 very ripe bananas

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp cinnamon

a pinch of salt

1 1/2 cup of flour

Cheesecake Stuffing

8 oz cream cheese (at room temperature)

2 eggs

1/2 cup granulated sugar

1/3 cup flour

Start by mixing together banana bread mixture. Combine: egg, coconut oil, both sugars, vanilla, and Greek yogurt. Cream together then add bananas. Then add remaining dry ingredients and blend well. Batter may be a little lumpy that is fine. Then mix together cheesecake stuffing. Combine all ingredients and mix until smooth. Then use cooking spray to coat bread pan and begin layering mixtures. First 2/3's of the banana bread mixture, then all of the cheesecake stuffing, followed by the rest of the banana bread mixture. Bake for 50 minutes or until tooth pick comes out clean when stuck all the way through cheesecake layer. Let cool, slice, and enjoy!
